I recommend, for example, a white wine from Macon, Sancerre, Rully, or a Riesling, but make sure the wine is organic, or even better: biodynamic! A wine can also be the result of meticulous winemaking without having the organic label, such as Châteaux Meyney and Les Hauts de Smith. Personally, what I seek in a moment with wine is a new gustatory experience that will also inspire me and free my mind. It’s an exhilarating or calm intoxication (or as the French call it: Ivresse).
